- 4 egg yolks
- 135g castor sugar
- 155g softened butter
- 75g sifted cocoa powder
- 90g dark chocolate, melted
- 250ml cream
- 25g icing sugar
- In a mixer: Cream the egg yolks and icing sugar until light and fluffy and white in colour.
- While continuing to whisk: Add the butter Add the sifted cocoa Add the melted chocolate
- In another bowl whisk the cream till thick. Add the icing sugar.
- Fold the cream and chocolate mixture together.
